"Cooking with a Sense of Place: A Slow Food Dinner with a Modern Twist" will incorporate the use of fresh, seasonal ingredients, and celebrate the cooking process. Chef Mallett was a semi-finalist for the 2011 James Beard Foundation Awards for Best Chef: Northeast and he is at the forefront of the farm to restaurant movement in NH. His Black Trumpet is a family-owned bistro and wine bar in the heart of Portsmouth's historic old port. The menu changes every six weeks to capitalize on the freshest seasonal ingredients. The wine list features a variety of unheralded gems that pair well with the bold flavors of Chef Mallett's cuisine.
